Hey everyone happy hump day! This week I’ve been keeping up with my healthy eating goals and have managed to cook myself dinner most nights. I’ve been focusing on consuming mostly fruits and veggies! Some of the things I cooked this week were salad, cauliflower tacos, and vegetarian chili. My favorite, and the easiest was the salad. I made the salad with arugula and baby spinach. I sliced tomatoes, cucumbers, avocado, mozzarella, peppers and onions and added a can of organic chickpeas. I also made a homemade dressing to cut some calories from lemons, vinegar, olive oil and a little honey. It was delicious and provided me with so much energy!

As for working out, I haven’t made hardly any time for it this week. School is finally in full effect and exams and assignments begin to pile up, and so does my stress. The reading this week talked about how the fast pace living can cause stress to take away our energy.
I too find it difficult to find time or motivation to work out when I am stressed out, even though I know it could help me. I definitely plan to step it up this week as for working out. I did go to the gym before class this morning.
I learned from the reading that we are more susceptible to getting sick when we are stressed and overwhelmed. Prolonged stress on your body can weaken your immune system. I also learned about stress having a negative effect on our memory and cognitive abilities. Its crazy, we stress about our exams and the stress to do well impairs us! Learning all the negative effects stress can have on our minds and bodies made me realize that there are several things I need to do to keep my stress in check. Getting more sleep, and less electronics before bed are going to be my main goal. Both of these things will give my mind a chance to reset and are essential. I’ve always been jealous of the people who LOVE to work out, because to be honest I definitely don’t. Working out can release stress and I am striving to make physical fitness an outlet.
